Fruit Pizza - great, easy summertime
treat!

Ingredients:

Roll of Pillsbury croissant (8 ct.)
3 oz. cream cheese softened
1 tbs sugar
2 cups cool whip
Fresh fruit such as blueberries,
strawberries, kiwi, raspberries
Mandarine orange slices


Directions:
Spread croissant triangles out on round
pizza pan, smoothing the seams
together to make the "crust". Bake at
350 degrees for 10-12 minutes or untill
light golden. While it cools, mix cream
cheese, sugar and cool whip to
make
"sauce". Add fruit "toppings".

This is best with fresh fruit, but you
can use frozen, just thaw and
drain
well or the pizza will be soggy.

Stir Fry Chicken

2 Tablespoons peanut oil
6 cloves of garlic, minced
1 teaspoon
fresh ginger, grated
1 bunch of green onions, chopped
1 teaspoon salt
1 pound boneless, skinless chicken breasts, cut into strips
2 onions thinly sliced
1 cup shredded cabbage
1 red pepper sliced
2 cups sugar snap peas
1 cup chicken broth
2 Tablespoons soy sauce
2 Tablespoons white sugar
2 Tablespoons cornstarch

Heat oil in wok and stir in the garlic, ginger, green onions and salt.  Stir fry
about 2 minutes. Add chicken and stir about 3-4 minutes. Add sliced
onions, cabbage, peppers, peas and 1/2 the broth.
In a small bowl mix the soy sauce, sugar and corn starch with the
remaining 1/2 cup broth. Add to wok and stir until all chicken and veggies
are coated with the thickened sauce.  Yum!
